The October Meeting of the E.C.B. was held at Southern New
Hampshire
University in Manchester, N.H. It was hosted by our board member
Chef
J.Desmond Keefe CEC, CCE. Desmond along with his students Matt
Martin
and Zach Forsythe put together a wonderful Dinner experience.
It started
with some great Hor Doerv'es and was followed up with a great
dinner.
We started with an Appetizer of Sesame Crusted Salmon Fillet
with an Orange
Cream Sauce served over a bed of Wilted Spinach and topped with
Caramelized
Red Onions. It was followed with a salad of Mesculin Greens with
Herb Vinaigrette. Our main course was a Pan-Seared Duck Breast
and Roast
Legand Thigh with a Cherry Demi-Glace served over Multi-Grain
Cakes
of Wild Rice, Quinoa and Couscous and accompanied with Mustard
Glazed
Brussel Sprouts.
We finished up our meal with a great dessert of Vanilla Bean
Ice Cream with Fresh Blueberries and topped with a Blueberry
Foam.
We then were treated to a great education component when Chef
Stefan Ryll
CEC demonstrated his expertise on German cooking. He prepared
a meal of
Sauerbraten, Wiener schnitzel with a Lemon Butter Sauce with
Capers and
Parsley, Herbed Spaetzel and braised Red Cabbage. We were then
given a
demonstration on the use of Lecithin in making Blueberry Foams
from
Desmond's student Matt Martin. It was a very informal demonstration
in the
middle of the kitchen where we all feel at home. We were also
joined by
members of the New Hampshire ACF. It was great to share a night
with a
fellow New England Chapter. I would like to thank Chef J.Desmond
Keefe
and his wonderful staff for their hospitality. It was a great
night and a
great meeting!
Our last monthly meeting for the year will be on November
21st at Harbar
LLC in Canton. They are an experienced manufacturer of tortilla
and specialty
flatbreads. We will be treated to a tour of the facility and
learn the secrets of
flatbreads and tortillas. Please join us for a great night and
great food. Make
