Presidents Message March 2005

The ECB held another outstanding meeting on Tuesday, February 15th, at Everett High School, and members in attendance were treated to a fabulous evening. Our hosts began the evening with a very special touch, giving flowers to each woman who entered the room, in honor of Valentine's Day. In keeping with the holiday theme, the dining room was beautifully decorated in red and white. On each table was a centerpiece made of heart-shaped balloons and white chocolate heart shaped boxes, which were overflowing with mini chocolates.
After the business of the club was conducted, our guest speaker Ms. Toni Elka, Program Coordinator for the Anthony Spinazzola Foundation, spoke and showed a video on the "Careers Through Culinary Arts Program". Our meeting continued with a fantastic dinner consisting of food stations. Our first station consisted of two salads: Fennel, Radicchio, Baby Arugula with Orange Segments and Shavings of Parmesan Reggianno Cheese Dressed with Citrus Vinaigrette and Escarole, Romaine, Bibb Lettuce, Granny Smith Apples, Fresh Herbs, Pomegranate Seeds and Yogurt Soy Dressing. Our entrée station consisted of three perfectly cooked entrees: a Pan Seared Duck Breast with Blueberry Sauce, Cracked Pepper Encrusted Tenderloin with Juniper Jus and a Carved Rack of Lamb. These entrees were accompanied by Layered Vegetable Gratin of Zucchini, Summer Squash, Tomatoes, Caramelized Onions accented by a variety of cheeses, Israeli Couscous with Roasted Cherry Tomatoes and Kalamata Olives. To cap off this wonderful dinner was a 25-foot long display of assorted mini pastries and chocolates that were there for all to enjoy and/or to take home if desired.
It is difficult to describe the pride, talent and enthusiasm displayed by the culinary students on this always special evening. We express our congratulations and sincere appreciation to them for their work and dedication. Additional heartfelt thanks go to the talented instructors and our host chefs Des Makredes, CCE, Carolynn Parmenter and Karen Moran. I would also like to thank the Culinary Arts Department and the Audio Video Department of Everett High School, Ms. Toni Elka and Everett High School.
Always an added bonus are educational hours, and for this meeting, ECB members and guests received 3 hours.
I had the pleasure, also on this evening, of recognizing two ECB members for their outstanding attendance and support of the ECB. For many years, these two members have supported the ECB and shown their dedication by attending meetings every single month, regardless of the location. These members are Chef James Young, CCC and Chef Frank Trecarichi, CEC. On behalf of the ECB I thank you for your support and congratulations!

Please note that our March meeting will be held on a Thursday night, the 10th of March. ECB member, Chef Brendan Cronin, will showcase La Chanterelle Restaurant at Endicott College. To entice you further, this meeting will also offer 3 hours of continuing education. Please make your reservations early to ensure that you will be able to attend this meeting.

This year, the ECB will again be awarding scholarships to deserving culinary students throughout New England and this year, they will be available to culinary students at the following schools and colleges: The New England Culinary Institute, Montpelier, VT; The Culinary Institute of America, Hyde Park, NY; Newbury College, Brookline, MA; Johnson & Wales, Providence, RI; Endicott College, Beverly, MA; Bunker Hill Community College, Charlestown, MA; North Shore Community College, Danvers, MA and Massasoit Community College, Brockton, MA. The Scholarship Committee is reviewing our list of schools and colleges with the possibility in mind of awarding additional scholarships. To find out more about these scholarships, please contact the financial aid offices at these schools and colleges or contact our Scholarship Chair, George Anbinder.

In closing, I would like to remind you that the ACF Northeast Regional will be held in Columbus, Ohio from April 7th - April 10th. I hope many of you will plan on attending this annual event.
